Easy Chili

I don't know about you, but I like chili all year round. In our house, we eat chili on a lot of different things, so I cook up a batch and freeze it. This allows for use to have chili cheese fries, chili dogs, chili cheese baked potatoes, and whatever else we think to slop chili on top of. Now let me clarify, we don;t eat these things all the time, but I am married to a junk food junkie who needs his cheesy, greasy, goodness every once in awhile.

Here is my favorite chili recipe.
It's my favorite because it is easy, cheap, and oh so yummy!

Ingredients:
1 big can tomato juice (only use 1/2)
1 can tomato soup
1 1/2 lbs ground beef
1 onion
1 can mild chili beans
1 can pinto beans
1/2 package chili seasoning
salt & pepper to taste
Chili sauce to taste (optional)

Brown the ground beef

Chop 1 onion. I use whatever kind I have. This time I had a red onion.

Add onion to the ground beef while browning.
This allows all the flavors to mingle.

Put all the ingredients into a large stock pot.
I don't drain the beans b/c I like all the flavors mixed in, but that is my
preference. You do what you like.
Simmer for at least 2 hours.

Enjoy! Put whatever toppings you like on it. We like cheese.
Freeze the leftovers!

Thanks Judy for always cooking up yummy food and sharing the recipes!
